Raw Vegan Broccoli Soup

You’ve probably already seen all the creamy, winterly broccoli soups that give you this comfy feeling afterwards. Well, this one is different. It’s not only an un-cooked, raw vegan soup but also a summer version of our beloved broccoli soup – still creamy, yet lightened up with some refreshing lime and herbs.

And on top, this soup is fully raw! How we get it so creamy then? We simply freeze the broccoli before blending it with the other ingredients. This softens it and makes a homogenous, smooth soup possible. But the great taste isn’t all that this raw vegan broccoli soup has to offer – with some fresh spinach and powerful herbs in here, it is also packed with the good stuff.

 

Raw Vegan Broccoli Soup – The Recipe

– 3 cup defrozen brokkoli
– 1/2 avocado
– 1-2 garlic cloves
– 1 tbsp red onion
– 1/2 cup lime juice
– 1/2 celery stalk
– 2-3 cups filtered water
– 1 cup fresh spinach
– 2 tbsp basil
– 1 tbsp chives
– 1 tbsp mint
– Dash of Himalayan sea salt
– Dash of black pepper

 

1. Cut the broccoli into pieces and freeze it over night.
2. Take out the broccoli the next morning or a few hours before preparation to let it defrost.
3. Put all the ingredients together with the broccoli into your blender and mix well.
4. You can garnish with some leftover herbs or 1-2 Brazil nuts to get in your selenium. Enjoy!

Make your own version

As with any dish, everyone has different preferences. I personally like raw vegan soups pretty creamy and thick, in case you would love to have an even lighter version of this soup, simply add more filtered water. And if don’t want to go all raw and cold on this soup, you can also warm it up a little, preferable below 45° Celsius to maintain its nutritional value.
